Vinification: By hand to pick and select the grapes. Soft pressing and immediate cooling of the must. Fermentation at controlled temperature partly in steel vats and partly in wooden vats.

Elevation and refinement: the wine is left for at least eight months with it’s own natural yeast in steel vats and in small 228 litre wood barrels.
